Taco Pasta Bake
- *1 - 1 1/2 pounds ground beef, browned and drained
- *1 can of Rotel tomatoes
- *6 ounces of cream cheese (3/4 package)
- little less than 1/4 tablespoons of chopped onion, cooked with ground beef
- *1 pkg taco seasoning
- *1/2 cup hot water
- *1 can black beans or kidney beans, drained
- *12 ozs of pasta, al dente (I use rotini or penne)
- *2 cups shredded cheese (I use Mexican blend or cheddar and Monterey Jack blend)
- Mix first 7 ingredients together and heat on stove top until thoroughly mixed. Place ingredients in large casserole dish and top with shredded cheese. Bake for about 15 minutes.
- You could also top it with crushed Doritos, lettuce, fresh sliced tomatoes and sour cream, but my gang likes it just like it comes out of the oven.
