Black Forest Chocolate Bundt Cake
- 1 cup butter, softened
- 1 1/4 cup brown sugar, packed
- 3 egg
- 1 1/2 cup flour
- 3/4 cup cocoa
- 1 1/2 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cup sour cream
- 1 cup chocolate chips
- 1 cup dried cherries
- icing sugar
- Grease and flour a 10 cup (2.5 L) Bundt pan; set aside.
- In large bowl, beat butter with brown sugar until fluffy. Beat in eggs, 1 at a time. Into separate bowl, mix flour, cocoa powder, baking powder, baking soda, and salt. Stir into butter mixture alternating with sour cream (3 additions of dry, 2 of sour cream). Stir in chocolate chips and cherries. Scrape into pan.
- Bake in centre of 325 F oven until cake tester comes out clean - about 1 hour. Let cool in pan for 10 minutes. With plastic knife, loosen rim of cake. Place rack on pan, flip over so cake rests on rack. Let cool completely, then dust with icing sugar.
