Mollemma'S Egg Pocket
- *Bread (soft, so you can crimp the edges)
- *Eggs
- *Spinach (chopped)
- *Milk
- *Salt
- *Pepper
- *Olive or Canola oil
- *Optional maple syrup
- 1) put oil in a heated fry pan.
- 2) Scramble an egg w/ spinach and add salt and pepper to taste. Put aside.
- 3) Crack one egg and a splash of milk into a soup bowl and whisk.
- 4) Cut crusts off of the two slices of bread and dip one side of a piece into egg mixture.
- 5) drop slice onto pan, dipped side down.
- 6) quickly drop already made scrambled egg onto bread in pan.
- 7) take other slice of bread and dip one side in whisked egg mixture and lay on top, dipped side up, making a kind of sandwich.
- 8) use edge of spatula at an angle and carefully squish the edges all the way around so it makes a closed pocket.
- 9) let both sides brown then take out of pan.
- Enjoy!
