Mollemma'S Egg Pocket

  1. 1) put oil in a heated fry pan.
  2. 2) Scramble an egg w/ spinach and add salt and pepper to taste. Put aside.
  3. 3) Crack one egg and a splash of milk into a soup bowl and whisk.
  4. 4) Cut crusts off of the two slices of bread and dip one side of a piece into egg mixture.
  5. 5) drop slice onto pan, dipped side down.
  6. 6) quickly drop already made scrambled egg onto bread in pan.
  7. 7) take other slice of bread and dip one side in whisked egg mixture and lay on top, dipped side up, making a kind of sandwich.
  8. 8) use edge of spatula at an angle and carefully squish the edges all the way around so it makes a closed pocket.
  9. 9) let both sides brown then take out of pan.
  10. Enjoy!
