Tequila Chipotle Meatloaf
- 1 1/2 lbs ground chuck
- 1/2 pound ground pork (or pork sausage)
- 1 red pepper, diced
- 1 onion, diced
- 3 green onions, sliced
- 3 T chopped garlic
- 1 chipotle pepper, canned in adobo sauce, chopped fine
- 1 T adobo sauce
- 1 T worcestershire sauce
- 3 eggs
- 1/2 cup tequila
- 1/2 cup bread crumbs
- salt and pepper to taste
- 1 tsp ground chipotle powder
- 1. preheat oven to 325F. Mix all the ingredients in a large bowl (whiske the egg and tequila together to incorporate them, then add to the mixture).
- 2. Place the meat mixture in a loaf pan and bake for about one hour
- 3. Remove the meatloaf from the oven and let it rest for 10 to 15 min before slicing.
