Healthy Black Bean And Rice
- 3 cups cooked, cooled rice
- 1 large hydroponic cucumber, seeded, diced
- 1-2 bunch cilantro, chopped
- 1 med red bell pepper, diced
- 3-4 clove fresh minced garlic
- 2 cans black beans, drained, rinsed
- 2 jalapeno peppers, seeded, minced
- 1/2 med red onion, diced
- 1/2 cup fresh lime juice
- 1/2 cup red wine vinegar
- 1/3 cup light olive oil
- course ground black pepper
- salt
- In a jar, shake up the lime juice, red wine vinegar, olive oil, black pepper, and salt
- In a large mixing/serving/storage bowl, gradually combine all the prepared ingredients. The dressing always seems like a lot, but the rice will absorb. It's better the second day, just give it a good stir when you take it out of the fridge
