Dazzling Shrimp Scampi
- 2 lbs med - large shrimp shelled and deveined
- 1 can minced clams do not drain
- 3 lemons
- 1 lb salted butter
- 2 cups olive oil
- 1 large tomatoe diced
- 8 large clove garlic finley chopped
- 2 tsp dill
- 1/2 package angel hair pasta cooked, drained
- 1 Loaf crusty fresh italian bread
- Cook angelhair pasta drain, set aside
- melt butter in large saucepan
- add oil
- saute the garlic & tomatoe until tomatoe is cooked down (about 10-15 mins over med heat)
- once tomatoe is cooked down, add can of minced clams with juice.
- squeeze lemon into mixture, (avoid seeds) use pulp from lemons too! Great for flavor.
- cook an additional 5 minutes
- add dill
- add shrimp, cook about 4 minutes, until pink.
- Pour over pasta on indiviudual plate or add to one pot! Either way, YUMMMMY
- Try dipping the italian bread into the sauce. This is so delicious, Im getting hungry just thinking about it!
