Thai Noodle Salad

  1. Toss noodles with peanut sauce and set aside
  2. Mix in large bowl greens, mango, red pepper, carrots, green onion, basil and mint.
  3. In a saucepan combine rice wine vinegar, sesame oil, sugar and garlic. Simmer for 15 minutes. Take off heat and add Jalapeno and let cool.
  4. Once dressing is cool, add noodles to salad and toss with dressing.
