Thai Noodle Salad
- 1 cup linguine or soba noodles
- 3 cups mixed greens
- 1/4 cup mango
- 1 red bell pepper
- 2 carrots cut to matchsticks or shredded
- 2 green onions julienned
- 3/4 cup rice wine vinegar
- 5-10 leaves of basil chopped
- 3-4 leaves of mint chopped
- 2 Tbsp Sesame oil
- 2 Tbsp sugar
- 1 jalapeno pepper sliced
- 2 cloves garlic minced
- 3 Tbsp peanut sauce (pre-made)
- Toss noodles with peanut sauce and set aside
- Mix in large bowl greens, mango, red pepper, carrots, green onion, basil and mint.
- In a saucepan combine rice wine vinegar, sesame oil, sugar and garlic. Simmer for 15 minutes. Take off heat and add Jalapeno and let cool.
- Once dressing is cool, add noodles to salad and toss with dressing.
