Mashed Yucca With Corn + Carrots
- 2 Medium sized Yucca
- 2 Ears of Corn
- 1 Lg Carrot
- 1/2 Medium size Purple Onion
- 4 Cloves Garlic
- 1 tsp Sea Salt
- 1 tsp Ground Pepper
- 1/2 tsp Coriander
- 1/2 cup fresh Cilantro
- 2 TBS Extra Virgin Olive Oil
- In a large pot boil water with a dash of salt for the yucca. Skin the Yucca and cut into 3/4" thick slices, drop into boiling water and cook until a fork can easily break it apart. Then drain and return back to the pot.
- While the yucca is cooking, cut the corn off of the cob, dice the onion, garlic, cilantro and carrot. In a large sauce pan heat the olive oil then add the above ingredients along with the salt, pepper and coriander. Cook thoroughly on medium heat, about 10-15 minutes.
- Once everything is done cooking combine in the large pot and mash to desired consistency, leaving some texture.
