Dark Rum And Crab Dip

  1. Preheat oven to 350F. In medium saucepan, melt butter over medium heat and saute onion and garlic until softened but not coloured, about 10 minutes. Add rum and cook for 3 minutes.
  2. Blend warm onion mixture with rind, juice, Tabasco, cream cheese, mayonnaise, and crab meat until well combined. Salt to taste.
  3. Place in ovenproof crock or ramekin and warm for 20 minutes. Sprinkle with chives and serve with plantain chips.
