Dark Rum And Crab Dip
- 1 Tablespoon butter
- 1/2 cup white onion, finely chopped
- 3 cloves garlic, finely chopped
- 1/3 cup dark rum
- Grated rind of 1 lime
- juice of 1 lime
- 1/2 teaspoon Tabasco sauce
- 8 oz cream cheese, softened
- 1/3 cup mayonnaise
- 4 oz crab meat
- Salt to taste
- 2 tablespoon fresh chives, finely chopped
- Preheat oven to 350F. In medium saucepan, melt butter over medium heat and saute onion and garlic until softened but not coloured, about 10 minutes. Add rum and cook for 3 minutes.
- Blend warm onion mixture with rind, juice, Tabasco, cream cheese, mayonnaise, and crab meat until well combined. Salt to taste.
- Place in ovenproof crock or ramekin and warm for 20 minutes. Sprinkle with chives and serve with plantain chips.
