Quick And Hot Tortilla Soup
- 2 Tbsp. vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2-3 chipotle chile on adobo, minced
- 1 Tbsp. chili powder
- 2 tsp. salt
- 6 cups chicken broth
- 2 cups frozen corn kernels
- 1 - 15oz. can whole tomatoes, undrained and broken up
- 2-3 large cans breast meat chicken
- 1/2 cup cilantro leaves
- 1/4 cup freshly squeezed lime juice
- Corn tortilla chips
- In large saucepan heat oil and saute onion, garlic, chipotle, chili powder and salt until onion softens, about 5 minutes. Add broth and bring to boil. Reduce heat and simmer uncovered about 10 minutes. Add corn and tomatoes simmering about 5 minutes. Remove from heat and add cilantro and lime juice. Serve in heated bowls and sprinkle with broken tortilla chips.
