Quinoa Stir Fry With Cashews And Pineapple
- 1 cup quinoa rinsed and drained
- 1 cup pineapple juice
- 1 cup water
- 1/4 tsp soy sauce
- 4 oz raw unsalted cashews
- 3 Tbsp peanut oil
- 2 scallions sliced in rounds
- 2 cloves garlic minced
- 1 hot chili sliced in rounds
- 1/2 inch ginger peeled and minced
- 1 red bell pepper seeded and diced
- 1 cupt frozen peas or edamame
- 1/2 cup fresh basil leaves rolled and sliced
- 2 Tbsp fresh mint finely chopped
- 10 oz fresh pineapple cut in bit size pieces (about 2 cups)
- 3 Tblsp soy sauce
- 1 Tblsp mirin
- Lime wedges
- Bring water, pineapple juice and 1/4 tsp soy sauce and quinoa to boil. Lower heat and cover for 12-14 minutes. Uncover and fluff, let cool or refrigerate overnight.
- Toast cashews in dry pan 4-5 minutes and set aside.
- Add peanut oil, scallions, garlic. When it sizzles, add pepper and ginger. After 2 minutes, add bell pepper and peas/edamame. Stir fry 3-4 more minutes. Add basic and mint and stir fry another minute. Add pineapple and quinoa.
- In measuring cup, combine soy sauce and mirin and then pour on quinoa. Stir fry another 10 min. serve with lime wedges.
