Creamy Shrimp And Bacon Grits
- Grits:
- 2 cups heavy whipping cream
- 2 cups milk
- 3 cups instant grits
- 2 cups of a three-cheese blend (Asiago, Parmesan, Romano)
- 1/2 stick of butter
- 1 Tbs. minced garlic (fresh from jar)
- salt to taste
- Shrimp:
- 1/2 pound of thick pepper bacon, chopped
- 1pound large shrimp, peeled, deveined
- 1/2 red onion, jullian sliced
- 1/2 cup chicken broth
- 2 Tbs. butter
- fresh parsley
- For Grits:
- In a saucepan, pour in heavy cream, milk and butter and bring to slight boil, then reduce and simmer.
- Add the grits and stir for 5 minutes.
- Add in minced garlic and cheeses. Lightly season with salt.
- For Shrimp:
- In a large skillet over medium heat, add bacon and onions. Cook until brown and lightly crisp. Add butter, chicken stock and shrimp and simmer for 2-3 minutes until shrimp is cooked and remove from stove.
- Scoop grits into bowls and spoon shrimp mixture onto the center and garnish with parsley.
