Double Blueberry Muffins
- 1 1/3 c. flour
- 1/3 c. sugar
- 1 tbsp baking powder
- 1 tsp salt
- 1 egg
- 1 c milk
- 1/3 c butter or marg, melted
- 1 1/2 c blueberry cereal (I like Paul Newman's)
- 3/4 c fresh or frozen blueberries
- Heat oven to 400. Mix flour, sugar, baking powder and salt in large bowl. Beat egg in small bowl; stir in milk and butter. Add to flour mixture; stir just until moistened (batter will be lumpy). Stir in cereal and blueberries.
- Spoon batter into greased or papered muffin pan, fill 2/3 full.
- Bake 20 min til golden brown. Serve warm.
- You can add 1/4 c semi-sweet or white chocolate bits to batter just before baking or add 1 1/2 tsp grated orange or lemon peal to egg mixture before mixing with flour.
- You can also use mini muffins 24-30. Bake only 15 minutes
