Alex'S Cherry Tomato App
- 3 packages of cherry tomatoes
- 1/2 cup good extra virgin olive oil
- 3 cloves crushed fresh garlic (cloves NOT whole heads!)
- 1 bunch basil (remove leaves, stack and roll them like a cigar then finely chop)
- 1/2 small jar sundried tomatoes (+ half the oil from the jar)
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1) Spread tomatoes evenly on bottom of dish (DO NOT layer!).
- 2) Pierce each tomatoe with end of knife.
- 3) Add all ingredients and mix well with hands to ensure even distribution/coating over tomatoes.
- Bake @ 375 degrees (on convection setting if possible) in pre-heated oven for approximately 45 minutes or until tomatoes appear SLIGHTLY charred.
- Let cool and serve with sliced fresh bagette.
