Mommy'S Meatloaf
- 1 lb lean ground beef
- 1 lb ground pork
- 3/4 cup milk
- 1/2 cup Italian bread crumbs
- 2 eggs
- 1/2 cup Parmesan cheese
- 1 tsp pepper
- 2 tsp salt
- 2 tbsp Worcestershire sauce
- 2 chopped basil leaves
- 1 tbsp parsley
- 1 can of tomato paste
- 1 chopped medium onion
- 1/2 chopped large green pepper
- Preheat oven to 350 degrees. In a large mixing bowl mix all of the ingredients saving about 1/5 of the tomato paste. Shape meatloaf in baking dish. Spread remaining paste on top. bake for 45-60 minutes. Depending on how high you make your loaf the longer it will take to bake. I suggest flatting it a little bit to prevent longer cooking times. (Over cooking this dish will dry the meatloaf out).
