Bahamian Peas & Rice
- 1 med ounion
- 1 small green peper,
- 1 sml goat,pepper(scotch bonette )
- 1/2 cup veg oil, ,
- 2 tlbs fresh green tyme,
- 2 can peas-(peagon)or boil 1/2 bag of dry peas & follow direction,
- 1/2 cup tomateo paste,
- 2-tbls browning,
- 4 cubes chicken bullin,
- 3 cups rice (par-boil),
- 4 cups water ,
- 4 slice bacon,(opitional)
- 1/4 pound salt pork(opitional)
- 1/2 cup cut up chicken (opitional)
- or any meat thats left over.** note-
- , but if you in tend to use all it will be a single meal .
- jullian cut all veg,
- place a large cooking pot on med heat on the stove.
- pour oil in pot & let it get very hot,
- conbine all seasionings, herbs and vegs and opition of meat to hot oil.
- let them cook about 5 mins,stir often.
- add tomateo paste,browning and stir, letting tomatoe paste cook for 2 mins,
- now add peas and water,cover and let simmer for 5 mins.
- ADD rice and stir once let cook on med heat for 20 mins,turn rice after cook time is finished and let stand 5 mins on very low heat .
