Sun Dried Tomato Spanikota
- 1 Jar of Sun Dried Tomatoes
- 1/2 Pound of Fresh Spinach
- 1 Small Onion
- 1 Block of fresh Feta Cheese
- 1 Pint of Pecorino Romano Grated Cheese
- 1 Small Container of Ricotta Cheese
- 1 Box of Puff Pastry
- 1/2 Stick of Butter
- 1 Egg
- 1 Bunch of Fresh Parsley
- Prep:
- Wash and Strain Spinach, Finely Chop.
- Chop onion into small squares
- Chop sundried tomatoes into fine squares
- Chop Parsley
- Roll Puff Pastry on Counter (use flower underneath)Cut each sheet 3x3 (you should end up with 18 squares if you use both sheets
- In a mixing bowl, add all ingredients, mush up with hands. Dollup mix inside squares, roll into egroll shape... Baste with butter. Should take about 25-30 minutes at 350
