Sun Dried Tomato Spanikota

  1. Prep:
  2. Wash and Strain Spinach, Finely Chop.
  3. Chop onion into small squares
  4. Chop sundried tomatoes into fine squares
  5. Chop Parsley
  6. Roll Puff Pastry on Counter (use flower underneath)Cut each sheet 3x3 (you should end up with 18 squares if you use both sheets
  7. In a mixing bowl, add all ingredients, mush up with hands. Dollup mix inside squares, roll into egroll shape... Baste with butter. Should take about 25-30 minutes at 350
