Tomatillo Salsa

  1. Combine diced tomatillos, sweet red pepper, yellow pepper and onion in a large glass bowl.
  2. Stir well. Add vinegar, sugar and juices; stir well to combine.
  3. Stir in cilantro, cumin and red pepper. Stir well again to combine. Cover and refrigerate for at least 2 hours.
  4. Serve salsa with unsalted tortilla chips, beef, pork or chicken.
  5. Makes 1 3/4 cups.
