Tomatillo Salsa
- 1 c. jusked, diced tomatillos
- 1/4 c. diced sweet red pepper
- 1/4 c. diced sweet yellow pepper
- 1/4 c. diced onion
- 2 Tbsp. white wine vinegar
- 1 Tbsp. sugar
- 1 Tbsp. unsweetened orange juice
- 1 Tbsp. lime juice
- 1 Tbsp. lemon juice
- 2 tsp. chopped fresh cilantro
- 1/2 tsp. ground cumin
- 1/4 tsp. ground red pepper
- Combine diced tomatillos, sweet red pepper, yellow pepper and onion in a large glass bowl.
- Stir well. Add vinegar, sugar and juices; stir well to combine.
- Stir in cilantro, cumin and red pepper. Stir well again to combine. Cover and refrigerate for at least 2 hours.
- Serve salsa with unsalted tortilla chips, beef, pork or chicken.
- Makes 1 3/4 cups.
