Bon Bon Chicken
- l lb chicken breasts
- SAUCE
- 1 in ginger
- 1 garlic
- 2 T tahini
- 1 T sesame oil
- 1 t sugar
- 2 1/2 t chili oil
- 4 t soya
- 1/2 t roasted and ground Sichuan peppercorns.
- ALSO
- 1 gr onion
- 1/8 slice ginger
- 1 stalk celery, diced
- 1 1/2 oz cilantro inc. stalks
- Combine sauce ingred. and mix well.'
- Cut chicken into strips. Cover with water, add scallions, ginger and salt. Bring to boil, then simmer gently til done - it's v quick.
- Remove chicken and rinse under cold water. Reserve 3 T poaching liquid. Pull chicken into long shreds.
- Mix reserved poaching liquid with tahini.
- Combine chicken, celery, cilantro and sesame sauce. Garnish with cilantro
