Remember When Cake

  1. In a large mixing bowl, cream shortening and sugar. Mix in egg whites and cherry juice, milk. In a separate bowl, combine flour, baking powder and salt. Add to creamy mixture, mix well. Fold in cherries.
  2. Grease and flour an 9x12 cake pan. Pour in batter. Bake at 350 degrees for 30-35 minutes, or until a toothpick comes out clean from the center of the cake. Cool before frosting.
  3. Frosting: Combine the sugar, egg whites, water,corn syrup and crm. tartar in a saucepan. Cook over low heat. Beat mixture in pan on low with a handmixer for about for about 10 minutes. Pour mixture into a mixing bowl. Add vanilla. Beat on high until peaks form. Spread on cooled cake. Enjoy!
