Asian Love Letters
- 2 cups vegetable oil for frying
- 1 pkg egg roll wrappers
- 2 cups thinly sliced napa cabbage
- 2 cloves minced garlic
- 2 inched peeled, minced ginger
- 1/4 cup minced cilantro
- 2 Tbl soy sauce, or to taste
- 2 Tbl hoisin sauce
- 1 Tbl sugar
- 1 beaten egg for sealing
- Combine vegetables and saves in a bowl. Set aside. Preheat oil to 350 degrees. Cut egg roll wrappers along the diagonal to form triangles. Place on heaping teaspoon of filling in the center of one triangle an spread egg wash around the edges. Place a second triangle on top and seal edges by pressing firmly around the perimeter. You will have a triangular ravioli at this point. Bring the long corners of the triangle together and seal with the egg wash. Now you should see an open envelope shape. Fry until golden brown and allow to drain on paper towels. Serve warm with your favorite dipping sauce.
