Chi Dynasty'S Chinese Chicken Salad
- Dressing
- 5 TBSP plus 1 tsp soy sauce
- 2 TBSP plus 1 tsp rice vinegar
- 2 TBSP sugar
- 1 TBSP plus 1 1/2 tsp sesame oil
- 2 tsp fresh grated ginger
- Salad
- 8 cups chopped iceberg lettuce
- 3 cups crispy fried noodles
- 1 lb boiled chicken breast cut into strips.
- 1/3 cup finely chopped peanuts.
- 2 TBSP minced preserved ginger
- 1 TBSP roasted black sesame seeds
- 1/4 cup chopped green onions
- 1/4 cup cilantro leaves
- In a medium bowl, whisk soy sauce, rice vinegar, sugar, sesame oil and ginger.Taste and adjust seasoning and flavoring as desired.
- In a large bowl, toss together the lettuce, noodles, chicken, peanuts, ginger, sesame seeds, green onions and cilantro leaves. Add half the dressing, tossing lightly to coat. Taste and toss in additional dressing as desired. Serve immediately.
