Spicy Italian Red Beans And Rice
- 8 ounces Italian Sausage (hot or sweet), removed from casing
- 1/2 C. Chopped Onion
- 1/2 C. Each chopped green & red bell pepper
- 2 tsps. minced garlic
- 1 Can red kidney beans, undrained
- 1 Can pinto beans, undrained
- 1 can (11 1/8 ounces) condensed Italian tomato soup
- 1/2 cup salsa (mild or hot)
- 5 C. hot cooked rice
- 1/4 cup sliced Scallions
- 1. Brown sausage in a large skillet over medium-high heat, breaking up chunks. Drain off Fat.
- 2. Add onion, green and red pepper and garlic. Cook 8 minutes or until vegetables are tender.
- 3. Stir in beans, soup and salsa. Reduce heat to low and simmer 15 minutes, stirring occasionally, until hot and flavors have blended.
- 4. Spoon over rice. Top with Scallions.
