Harira Soup From Dubai
- 300 g cubed lamb/mutton/goat on the bone
- 1 tsp ground turmeric
- 1.5 tsp ground black pepper
- 1 stick of cinnamon
- 1 Tbsp freshly ground ginger
- 0.25 tsp ground cayenne pepper
- 2 Tbsp butter
- 2 stick chopped celery
- 2 medium onions chopped
- 1 bunch coriander chopped
- 1 large can chopped tomatoes
- 7 cups water/chicken stock
- 1 cup green/black lentils
- 1 can drained beans (any type)
- 100 g noodles
- 2 Tbsp flour
- 1 juiced lemon
- Heat and stir meat, turmeric, pepper, cinnamon, ginger, cayenne, butter, celery, onion, coriander.
- Add tomatoes without juice, water/stock, lentils; boil and reduce to simmer for 2 hours.
- Add beans and noodles and cook for 10 mins; add flour mixed with tomato juice and cook for 5 mins.
