Macaroni And Cheese
- 2 tbs butter
- 1 cup cottage cheese
- 2 cups whole milk
- 1 tsp dry mustard
- Pinch cayenne
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 lb extra sharp cheddar cheese grated
- 1/2 lb uncooked macaroni
- 1. Use 1 tbs butter to grease 9" round or square pan
- 2. Preheat oven to 375 degrees and position rack in upper third of oven
- 3. Puree cottage cheese and spices in blender. Once finely pureed, add milk to blend. Reserve 1/4 cup grated cheese for topping
- 4. In a large bowl combine remaining cheese, Blended mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake for 30 mins.
- 5. Uncover pan, stir gently, sprinkle reserved cheese and dot remaining tbs butter onto surface
- 6. Bake uncovered in oven for additional 30 minutes until browned.
- 7. Let cool for 15 mins before serving.
