Shammi Kebabs

  1. Soak the channa in cold water.
  2. Heat one tablespoon oil on high heat and whole in the whole spices;
  3. As they start spluttering, stir in the onions and fry for 2 mins until pale brown.
  4. Add the ginger and keep stirring until the spices turn golden brown.
  5. Now add the minced meat, drained channa and all other spices and the chopped green chillies. Stir continuiosly until the meat is brown all over.
  6. Next add one cup of hot water and boil the meat until the channas are cooked and water completely evaporated.
  7. Leave the mix to cool then add salt to taste and grind the mix in a blender.
  8. Make meat-ball size rolls in your palm/shape into flat disks.
  9. Dip in beaten egg before shallow frying them on both sides.
  10. Serve with mint or tomatoes chutney.
