Marinated Cherry Tomatoes

  1. Pour the tomatoes, a few at a time, into a colander or wire strainer and dip into a large pan of rapidly boiling water for about 15 seconds.
  2. Immediately rinse tomatoes with cold water. Slip off the peels and stems and put tomatoes into a refrigerator container or bowl.
  3. Combine the vinegar, onion, basil, oregano, salt, pepper and salad oil; shake or beat until blended, then pour over tomatoes.
  4. Cover and chill for at least 2 hours, or as long as overnight, stirring several times.
