Jane Zinda'S Roast Chicken
- 1 6oz can tomato paste
- 2 cloves garlic
- 2 T. sugar
- 10 whole cloves
- 2 T worchestershire sauce
- 1/2 t. paprika
- 1 t. salt
- 2 T. vinegar
- 1/4 t. tumeric
- 5 whole cardoman or 1-2 tsp. ground
- 1 stick cinnamon ( I have substituted ground; 1-2 tsp.
- 1/3 cup butter
- 1 1/4 c. water
- cut up chicken pieces
- cut up onions
- cut up green or red bell peppers
- slivered almonds or sliced almonds
- Mix all the ingredients together for the sauce in a saucepan, and simmer for about 5 min., at least until the butter melts. ( I usually double the sauce, but base it on how much chicken you use. The sauce is the best part and there never seems to be enough!)
- Put the chicken in an oven roasting dish coated with cooking spray. Brown the chicken in the oven for 30 min at 425 degrees. Add the sauce, onions, peppers and almonds to the dish and bake about 45min at 350 degrees.
- I serve this with brown or white rice.
