Irish Meat Loaf
- 1 1/2 lb. ground beef
- 1/2 lb. ground pork
- 3 c. soft bread crumbs
- 1 egg
- 1/2 c. minced onion
- 3/4 c. milk
- 2 tsp. salt
- 1 1/4 tsp. ginger
- 2 c. peeled apples, chopped
- 1 1/2 c. mashed potatoes
- 1 (10 oz.) pkg. frozen, chopped broccoli, cooked and drained
- 1/2 c. Cheddar cheese, grated
- Blend beef and pork in a bowl.
- Add next 6 ingredients; mix to blend.
- Stir in apples.
- Shape into loaf on jelly roll pan.
- Bake in preheated 350u0b0 oven for 45 minutes.
- Drain off excess fat. Combine potatoes and broccoli; frost loaf with potato mixture. Sprinkle top with Cheddar cheese.
- Bake 15 minutes longer.
- Let stand about 5 minutes before removing to warmed platter.
