Greek Style Cucumber Salad

  1. Peel the cucumbers, slice in half the long way and remove the seeds. Tip: use a grapefruit spoon to help with seeding the cucumbers. Slice the cucumber the long way again and slice into uniform pieces. If you want to make it into a salsa dice the cucumber smaller
  2. Dice the red onion and red bell pepper. If want more color you can use a 1/4 cup each of red, yellow and orange bell pepper. Tip: if you do not like a strong onion flavor place the onions in cold water till you are ready to use them.
  3. Slice the scallions into thin rounds
  4. Mince the cilantro and red chili. Note: If you are not a fan of cilantro you can use parsley instead.
  5. Zest the lemon and then roll the lemons on the counter and juice them.
  6. Mix in a large non reative bowl all the ingreidents except for the feta cheese. Let sit for at least an hour for the falvors to meld together.
  7. Right before serving crumble the feta into chucks and toss in to the salad.
