Fillo Pizza
- Vegetable oil spray
- 1 14.5 oz can diced tomatoes-no salt added
- 2 cups broccoli florets
- 2 cups asparagus
- 4 oz. mini bella sliced mushrooms
- 6 sheets thawed fillo dough
- 1/3 cup shredded part skim mozarella cheese
- 3 tbsp. shredded parmesan cheese
- 1/8 tsp. crushed red pepper flakes
- Blanch the broccoli and asparagus (3 min then ice bath) Cut the broccoli and asparagus into small pieces. Drain the tomatoes
- Preheat oven to 400 degrees
- Lightly spray foil covering on 15x10 cookie sheet.
- Working quickly stack the fillo sheets on the cookie sheet, spray lightly between sheets
- Spread tomatoes evenly over the fillo dough sheets
- Spread the vegetables evenly over the sheets. Mix the cheese and pepper flakes together and spread evenly over the pizza
- Bake 15 min @400 degrees.
- Slide off cookie sheet, cut and serve
