Melitzanes Me Loukanika - Eggplant And Sausage Pie
- 1 (1 lb.) eggplant, diced
- 1 Tbsp. salt
- 3 Tbsp. olive oil
- 1/2 lb. sweet sausage, casings removed
- 1/2 lb. hot sausage, casings removed
- 2 Tbsp. tomato paste
- 1 to 2 Tbsp. Romano or Parmesan cheese, grated
- 1/2 to 1 tsp. marjoram
- 1/2 to 1 tsp. thyme
- salt and pepper
- 2 1/2 c. Ricotta cheese, drained
- 2 eggs, lightly beaten
- 3 cloves garlic, finely minced
- 3 Tbsp. capers (chopped or whole)
- 1/2 lb. Mozzarella cheese, diced
- 1/2 to 1 tsp. dried thyme
- 1/2 to 1 tsp. dried marjoram
- salt and pepper
- 12 sheets filo dough
- 3 c. unsalted butter, melted
- 1/3 c. olive oil
- Dice the eggplant, leaving the skin on.
- Toss with salt and drain in a colander for 1 hour.
- Rinse under cold water and pat dry.
- Heat 2 tablespoons olive oil in a large skillet and cook the sausage until it has rendered its fat.
- Drain.
- In the same pan, cook the diced eggplant; add another tablespoon of olive oil and toss constantly.
