Slow Cooker Irish Coddle
- 4 large potatoes peeled and cut into 1 inch cubes
- 1 lb pork sausages
- 1 12 oz pack of center cut bacon - cut into 1 inch lardons (1 inch wide strips)
- 2 large onions coarsely chopped
- 1 Tablespoon finely chopped fresh parsley
- Salt
- Freshly ground black pepper
- 2 cups beef stock
- Dash of Worcestershire Sauce
- In large heavy skillet cook sausages and bacon long enough to colour them. Drain on paper towels . Cut sausages into bite size pieces.
- Layer the potatoes, onions, bacon and sausage seasoning each layer with pepper and parsley. Add the Worcestershire Sauce to the beef stock and pour liquid over the top. Cook on slow for 8 hours.
- Season to taste before serving.
