Maman'S Flan Caramel
- For the flan
- 1 (one) liter of whole milk
- 6 eggs
- 8 tablespoons sugar
- 2 teaspoons vanilla
- For the caramel
- 12 tablespoons sugar
- 6 tablespoons of water
- Start with the flan :
- Boil milk with sugar and vanilla and set aside to cool completely.
- Prepare caramel :
- In very clean pot (I keep a small one just for caramel and it is the only one I ever put in the dishwasher)
- Just melt the sugar with the water till the liquid is golden brown and smells divine.
- Pour it very quickly in a round pyrex and swirl your pyrex bowl to coat the caramel half way up or about the bowl. The caramel will get hard. Put aside.
- In a large bowl beat eggs and mix with cooled milk.(Make sure milk is cool or your eggs will cook).
- Pour mixture on top of caramel and place bowl in a water bath.
- Place in a pre-heated oven at 350 F for one hour to one hour and 15 minutes. Top should be slighty golden.
- Let cool completely and put in refrigerator. It is best made the day before.
- Spoon in small bowl or flip over on a large dish with a lip to contain melted caramel.
