Penne With Crisp Cauliflower

  1. Bring a large pot of water to a boil and cook penne.
  2. meanwhile, heat the olive oil over medium high heat. Add achovies and use a wooden or silicon spatula to smash the anchovies once they begin to melt into the oil.
  3. Add cauliflower and cook till soft and browned, about 10 minutes. Season to taste with salt and pepper.
  4. When penne is done cooking save 1 cup of pasta water and drain penne.
  5. Pour the drained penne into the pan with the cauliflower over medium heat , add a little pasta water, and stir together for a couple of minutes. Add more of the pasta water if the mixture is dry.
  6. Serve with grated cheese
