Penne With Crisp Cauliflower
- 1/3 cup extra virgin olive oil
- 4 oil packed anchovy fillets
- 1 head cauliflower (trimmed and cut in bite size pieces)
- salt and pepper
- 1 # penne
- grated dry jack or parm
- Bring a large pot of water to a boil and cook penne.
- meanwhile, heat the olive oil over medium high heat. Add achovies and use a wooden or silicon spatula to smash the anchovies once they begin to melt into the oil.
- Add cauliflower and cook till soft and browned, about 10 minutes. Season to taste with salt and pepper.
- When penne is done cooking save 1 cup of pasta water and drain penne.
- Pour the drained penne into the pan with the cauliflower over medium heat , add a little pasta water, and stir together for a couple of minutes. Add more of the pasta water if the mixture is dry.
- Serve with grated cheese
