Triple Chip Cookies
- 5 1/2 cups all purpose flour
- 1 tsp kosher salt
- 2 tsps baking soda
- 1 cup (2 sticks) butter at room temperature
- 1 cup vegetable shortening
- 1 1/2 cups packed dark brown sugar
- 1/2 cup white granulated sugar
- 2 eggs
- 3 tsp vanilla
- 1 cup semi-sweet chocolate chips
- 1 cup peanut butter chips
- 1 cup white chocolate chips
- 1/2 shredded sweetened coconut
- In a medium bowl combine flour, salt and baking soda and set aside.
- In a large mixing bowl cream butter and shortening together. Add both sugars and cream together. Add eggs and vanilla and mix only until combined. Gradually add dry ingredients but do not over mix. Add chips and coconut and stir until combined. Chill dough for an hour or up to overnight.
- Preheat oven to 350.
- Form dough into fist-sized balls and place at least 3 inches apart (you will only be able to fit 6 to a sheet).
- Bake cookies about 12 to 14 minutes until just starting to brown but don't overbake. Let cool 1 minute on sheets before transfering to tin-foil lined counters. Let set 30 minutes before moving to a plate, etc.
