Barbecue-Sauce Kabobs
- 1/2 c. hot-style catsup
- 2 Tbsp. brown sugar
- 1 Tbsp. lemon juice
- 1 Tbsp. vinegar
- 1 tsp. Worcestershire sauce
- 1 medium zucchini, cut into 1-inch slices and halved (1/2 lb.)
- cooking oil
- 1 lb. beef sirloin, cut into 1 1/2-inch cubes
- 1 (16 oz.) can whole white potatoes
- hot, cooked rice
- Preheat broiler.
- In a bowl, combine catsup, brown sugar, lemon juice, vinegar and Worcestershire sauce.
- Brush zucchini pieces lightly with cooking oil.
- On 4 long skewers, alternately thread beef, potatoes and zucchini.
- Brush with catsup mixture. Broil the kabobs 4 to 5-inches from heat for about 20 minutes. Turn once and brush occasionally with sauce.
- Serve kabobs on rice.
- (Can be cooked on grill.)
- Makes 4 servings.
