Mini Turkey Meat Loaves
- 1 lb. extra lean ground turkey
- 1 egg
- 1/4 c carrots
- 1/4 c broccoli or spinach (I used spinach)
- 1/4 c mushrooms
- 1/4 c tomatoes
- 1/4 c onions
- 3 garlic cloves
- 1 t salt
- 1 t pepper
- 1 t cayenne pepper
- 2 t herbes d'Provence
- 2 T flaxseed oil
- low-sugar ketchup
- Spray muffin pan with Pam
- Heat oven to 400 degrees
- Put turkey and egg in a bowl
- Puree; carrots, broc (or spinach), mushrooms, tomatoes and onions and garlic in food processor.
- Add puree to turkey
- Blend spices with oil and add to turkey
- Mix with your hands - it will be super gooey!
- Scoop into muffin pan
- Squirt each with ketchup
- Cover and chill for at least an hour - up to 6 hours.
- Put uncovered pan into hated oven
- Decrease temp to 375
- Bake for 40-50 min, until sides are getting dark
- Serving size is 3 mini meatloaves.
