Bacon And Garlic Potatoe Latkes
- 1 dozen medium potatoes, peeled and coarsely grated
- 3/4 cup flour
- 2 eggs
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup grated cheese, your choice
- 10 cloves garlic, baked 30 minutes @350
- 1/4 lb bacon, diced, cooked till crisp
- Toppers:
- tomatoes, chopped
- chives, chopped
- cottage cheese or sour cream
- apple sauce
- First get the garlic baking while peeling the potatoes and grating them.
- in a small bowl, mix together the flour, eggs, salt, and then the mashed garlic cloves.
- Add the cheese to the potatoes, then, with clean hands, pour the flour/egg mixture onto the potatoes and work it into the shredded mixture until there are no clumps of flour, all is coated well. Mix in the crumbled bacon.
- In a medium-high fry pan, pour 1 tblsp. canola oil, and in 1/4 cup quantities, put in the potatoe latkes, flattening them thin after putting them in the fry pan, Let them cook for 4-5 minutes on each side, adjusting your heat so that they don't burn in that time. If they brown too quickly, they taste raw in the middle.
