Abruzzo Bean Soup

  1. 1. Simmer in large pot approximately 1 1/2 hours: ham bone, onions, garlic, basil, bay leaves, 2 whole stalks celery, salt & pepper.
  2. 2. Place dried beans in large pot covered with water by three or four inches. Add 1 tsp. salt and the baking soda. Simmer for 45 minutes, then drain and change water. Simmer for 45 minutes. Add more water if necessary. When beans are almost cooked, drain and set aside.
  3. 3. Remove ham bone, celery stalks, fresh basil, and garlic cloves from broth. Add beans and all remaining ingredients. Simmer for approximately one hour.
