Rick'S Cheese Cake
- For Crust:
- 1 C. graham cracker crumbs
- 3 T. sugar
- 3 T. melted butter
- For Cake:
- 3-8oz. pkgs. cream cheese
- 3/4/ C. sugar
- 1 T. lemon juice
- 1 tsp. grated lemon rind
- 3 eggs.
- For Topping:
- 1 C. sour cream
- 2 T. sugar
- 1 tsp. vanilla
- Combine crust ingredients and press against bottom of 9" spring form pan. Bake 10 min. @ 300F.
- Combine softened cream cheese, sugar, lemon juice and rind. Mix until well blended.
- Add eggs, one at a time, mixing well after each.
- Pour mixture into pan. Bake 55 min. @ 300F.
- Combine topping ingredients and spread over baked cheese cake. Continue baking 10 min.
- Lossen cake from rim w/knife. Let cool. Remove from pan and chill.
