Rick'S Cheese Cake

  1. Combine crust ingredients and press against bottom of 9" spring form pan. Bake 10 min. @ 300F.
  2. Combine softened cream cheese, sugar, lemon juice and rind. Mix until well blended.
  3. Add eggs, one at a time, mixing well after each.
  4. Pour mixture into pan. Bake 55 min. @ 300F.
  5. Combine topping ingredients and spread over baked cheese cake. Continue baking 10 min.
  6. Lossen cake from rim w/knife. Let cool. Remove from pan and chill.
