Turkey Lentil Pilaf

  1. In large frypan, brown meat over medium heat until no longer pink, about 5 minutes, breaking meat into crumbles. Add onion and garlic and cook until tender, about another 5 minutes.
  2. Add mint, cinnamon and pepper and cook 2 minutes.
  3. Add lentils, rice, broth and tomato and bring to a boil. Reduce heat, cover and simmer until rice is cooked, 45=50 minutes.
  4. Optional garnish: Mix together 1/2 C crumbled feta cheese, 1 large chopped tomato, 3 T fresh mint and sprinkle on top.
