Peppercorn Seared Tuna Loin
- 6 oz Ahi Tuna
- 1 T Black papercorns, crushed
- 1 T. EVO
- 4 oz Roasted fingerling potatoes, 3/4" pieces
- 1 clove garlic sliced thin
- 2 T red onion julienne
- 1/4 c asparagus tips, blanched
- 4 grape tomatoes, cut in 1/2
- 1/2 c arugula
- Lemon juice to taste
- Balsamic vinegar to taste
- Heat saucepan over medium high. season tuna with peppercorns. Sear 30 sec on all sides. Remove from heat and let rest. Add potatoes to hot pan with onion and garlic. Sauted until heated through. Add a little EVO and heat. Place asparagus, tomatoes and greens in bowl. Pour the potato mixture over the greens. Add lemon juice and let wilt slightly. Place greens mixture on plate. Slice tuna and fan over greens. Drizzle with balsamic vinegar around and over tuna.
