Ginger Cookies

  1. 1. Cream butter and brown sugar. Beat in mollasses and egg.
  2. 2. Combine flour, ground ginger, baking soda together. Mix into butter mixture until well blended. Mix in fresh and crystallized ginger.
  3. 3.Refrigerate dough for 1 hour.
  4. 4. Preheat oven to 325*F
  5. 5. Shape dough into 1" balls and roll in granulated sugar. Bake about 10-12 minutes or until the surfaces crack slightly (less time if you like your ginger cookies chewy).
