Ginger Cookies
- 1 1/2 sticks Butter
- 1 C. packed dark brown sugar
- 1/4 C. molasses
- 1 Egg
- 2 1/4 C. unbleached all-purpose flour
- 2 t. ground ginger
- 2 t. baking soda
- 2 T. finely chopped fresh ginger root
- 1/2 C. finely chopped crystallized ginger
- Granulated Sugar/Raw Sugar or Dusting Sugar (all work well raw sugar looks best)
- 1. Cream butter and brown sugar. Beat in mollasses and egg.
- 2. Combine flour, ground ginger, baking soda together. Mix into butter mixture until well blended. Mix in fresh and crystallized ginger.
- 3.Refrigerate dough for 1 hour.
- 4. Preheat oven to 325*F
- 5. Shape dough into 1" balls and roll in granulated sugar. Bake about 10-12 minutes or until the surfaces crack slightly (less time if you like your ginger cookies chewy).
