Brunswick Chicken
- 2 cut up broilers
- 1/2 c flour
- 1 envelop herb salad dressing mix
- 1/4 c shortening
- 1 c chopped onion
- 1 tbl sugar
- 2 1 lb can tomatoes
- 1 pkg frozen corn, cooked and draine
- 1 pkg frozen lima beans, cooked and drained
- shake chicken in mix of flour and salald dressing mix in paper bag to coat well.
- brown a few pieces at a time in shortening in large frying pan-arrange in 12-cup baking dish
- saute onion in same frying pan
- blend in any remaining seasoned flour, and sugar; stir in tomatoes
- heat to boiling, stirring constantly
- spoon corn and lima beans around chicken in baking dish
- pour tomatoes over all
- cover with lid or foil
- chill
- remove from fridge-let stand at room temp 30 minutes before baking
- bake at 350 1 1/4 hours or until chicken is tender
