Tri-Color Cookies

  1. 1. Preheat oven to 350u0b0F and grease 3 (13- by 9-
  2. inch) metal baking pans. Line bottom of each
  3. with foil and spray with vegetable spray. ,
  4. 2. Break marzipan paste into small pieces and grind
  5. with sugar in food processor until no lumps
  6. remain. Transfer to a large bowl and add
  7. butter. Beat with an electric mixer until
  8. light and fluffy, then add yolks and almond
  9. extract and beat well.
  10. 3. Beat in flour and salt on low speed.
  11. 4. Beat egg whites in another bowl until they
  12. just hold stiff peaks and stir one third
  13. into batter to lighten slightly (batter will
  14. still be stiff). Fold in remaining whites
  15. thoroughly.
  16. 5. Divide dough into thirds (about
  17. 1 1/2 cups each). Stir green food coloring
  18. into one third and red food coloring into
  19. another, leaving one third plain. Spread
  20. each dough separately into a pan. (Layers
  21. will be thin.)
  22. 6. Bake layers in batches in middle of oven
  23. until just set and beginning to turn golden
  24. along edges, about 10 minutes total.
  25. 7.Line a large shallow baking pan with wax
  26. paper and slide green layer into it. Spread
  27. half of jam evenly over green layer and
  28. carefully top with plain layer. Spread
  29. remaining jam evenly over uncolored layer
  30. and carefully top with pink layer (trim
  31. edges if necessary). Cover with plastic wrap
  32. and weight with a large cutting board or
  33. baking pan. Chill at least 3 hours.
  34. 8. Melt chocolate in a double boiler or a metal
  35. bowl set over a pan of barely simmering
  36. water. Remove weight and plastic wrap and
  37. spread chocolate evenly over top.
  38. Let stand at room temperature 15 min to set.
  39. 9. Cut into small bars and serve.
