Skillet Cornbread With Rolled Oats

  1. Preheat oven to 400 degrees F. Melt butter in 10 inch cast iron skillet. In large bowl beat sugar into eggs. Sift dry ingredients in separate bowl and add to egg mixture with 1 tablespoon melted butter and buttermilk. Beat up batter quickly. With brush or paper towel coat bottom and sides of skillet with remaining butter. Pour batter into skillet and tap on counter to level batter. Bake in center of oven for 25 minutes or until top is lightly browned. After removing from oven allow to cool for several minutes. Cut into pie wedges and serve directly from skillet.
