Jeff'S Brownie Celebration Fruit Salad
- 2 medium red apples, chopped
- 2 Golden Delicious apples, chopped
- 3 large oranges - peeled, sectioned, and cut into bite-size pieces
- 2 bunches white seedless grapes, chopped
- 1 cup raisins (I mixed regular and golden)
- 1 (10 ounce) jar maraschino cherries, drained and chopped
- 3 cups pecans, candied in sugar ( if you need help with this, call me), and then chopped
- 1-1/2 cup mayonnaise (I use the Kraft Olive Oil kind)
- 1/2 cup sugar
- Juice from one very large lemon
- 2 large firm bananas. sliced
- Candied Pecans: in a 10-inch frying pan, melt 1 Tbs butter and get the pan hot, then toss in the pecans and a pinch of kosher salt; toss to coat the pecans in the butter. Tossing regularly to prevent scorching, toast the pecans for about 5 minutes then reduce the heat to low. Add 3 Tbs brown sugar and a splash of water to help it flow. Toss the pecans on the liquefied sugar to coat them then let them simmer in the melted sugar 'til the water cooks off, then remove from the heat.
- In a large bowl, combine the diced apples and lemon juice. Add the oranges, raisins, cherries and chopped pecans. Combine mayonnaise and sugar and mix well. Add to fruit mixture and stir to coat. Chill. Just before serving, stir in bananas.
