Smoked Chicken And Lentil Soup
- 1 tablespoon butter
- 2 leek, split and thinly sliced
- 2 carrot, finely chopped
- 1 large onion, finely chopped
- 1 teaspoon garlic
- 1 cup lentil
- 2 cups water
- Bouquet Garni
- 4 cups chicken stock
- 1/2 pound smoked chicken, cubed
- 1.telt butter in large saucepan. Add leeks, carrots, onion and garlic. Cook 4-5 minutes until slightly softened.
- 2.tinse and drain lentils, check for stones. Add to the vegetables with 2 cups water and bouquet garni. Bring to boil, reduce heat and cook for about 30 minutes, or until the lentils are just tender.
- 3.tdd the chicken, season to taste with salt and pepper. Continue cooking until lentils are done. Remove parsley and bay leaves.
