Seafood Casserole
- 1 large box Ritz crackers
- 1 lb. fresh mushrooms
- 4 Tbsp. butter, divided
- 3 cans cream of mushroom soup
- 1 pt. light cream
- 2 fish fillets
- 1 lb. lobster meat
- 1 lb. crab meat
- 1 lb. cooked shrimp
- 2 cans minced clams
- Butter two large casseroles.
- Heat oven to 325u0b0.
- Crush crackers into crumbs.
- In skillet saute mushrooms with 2 tablespoons butter.
- In bowl mix soup, mushrooms and light cream. Put 1 fish fillet on bottom of each casserole.
- Add a layer of mushroom sauce, then a layer of crumbs.
- Continue layering seafoods in casseroles with a layer of sauce and crumbs between each.
- Finish each with crumbs.
- Cut remaining butter into thin pats and place on top.
- Bake casseroles in a water bath for a little more than an hour.
- This dish may be frozen.
